We all scream for easy homemade organic ice cream!

Happy Wednesday! It has been hot and humid the last couple of weeks in southern California. So to stay cool, I’ve been making meals that require little to no heat and we’ve been using our Frogg Toggs chilly pads towels.

I don’t know about you, but after dinner I like dessert, so when I found this recipe from SparkPeople I had to try it. We have a fancy ice cream maker so Little Pumpkin Doodle thought it was strange when I told her that we were making ice cream in a blender.  I made some changes to the recipe, but it’s essentially the same and tastes more like soft serve ice cream.

Easy Organic Homemade Chocolate Ice Cream

1 can of  (14 oz.) organic sweetened condensed milk

2 cups organic heavy cream

1/2 cup organic half-n-half

1 teaspoon vanilla extract

1 tablespoon cocoa powder (optional for chocolate ice cream)

This recipe makes about 4-6 servings.

Blend all the ingredients in the blender until the mixture starts making peaks. Taste it. I promise it tastes just like soft serve. What’s great about this recipe is that it’s so easy to make.  Store in the freezer in an air tight container over night and serve the next day, yum! We like to serve ours with fresh fruit..

    The ice cream look delicious, but I wouldn’t trust myself, since I don’t have the self control to eat only 1 scoop, I’d eat 3 scoops in one sitting.
